Apple Cinnamon Muffins

A family favorite, these Apple Cinnamon Muffins are tender and sweet and filled with lots of cinnamon flavor.

It’s Tuesday morning of post thanksgiving turkey-coma. It seems like I've been in the kitchen a lot this weekend, as I'm sure you've been going as well. So, if I’m going to be in the kitchen, I might as well stay festive with these fall sweet apple cinnamon muffins.

I created this fall favorite recipe simply because I love the sweet combination of apple and cinnamon. I've been experimenting with different flours and sweeteners when I bake lately. I somehow have figured out the consistency balance of dry ingredients to wet.

I first started the apple sauce sauce with the intention of just making apple sauce, then I realized at I could use this golden sweetness as my sugar replacement in my muffins. That’s exactly what I did.

Cook Time: 20 minutes

Ready In: 45 minutes

Apple Cinnamon Muffins

1/2 cup coconut oil

1/2 cup organic butter

2 eggs

1/2 cup monk fruit sugar (substitute with Coconut sugar)

1 tsp cinnamon

1 tsp all spice

1 cup oat flour

3/4 cup chickpea flour

1 tsp baking powder

1 tsp baking soda

1-1/2 cups Homemade Apple Sauce (see recipe below)

Homemade Apple Sauce

3 Cortland Apples

1 Fuji Apple

Dice apples remove skin

Place in saucepan add 1/4 cup water, 2 tsp cinnamon and 2 tbsp maple syrup

Bring to a boil and simmer for 15 minutes


1. Preheat oven to 350 degrees F

2. Grease six muffin cups or line with paper muffin liners

3. Stir together 1 cup oat flour and 3/4 cup chickpea flour, 3/4 cup monk fruit sugar, baking powder, baking soda and 1 teaspoon cinnamon/all spice. Mix in coconut butter plus organic butter, eggs. Fold in apple sauce.

4. Spoon batter into prepared muffin cups, filling to the top of the cup.

5. Bake in preheated oven for 20 to 25 minutes, until a toothpick inserted into center of a muffin comes out clean.
