Easy 1, 2, 3 Morning Glory Cookies

Your mornings are about to get better with these morning glory cookies. The ideal portable breakfast option or snack on the go! So similar to morning glory muffins but without the muffin top. (Two hands up!) These are healthy and combine many delicious healthy ingredients and textures: coconut, dried cranberries, ground flax, pecans and shredded carrots, cinnamon and taste just like morning glory muffins! They are perfect when you need a little energy boost first thing in the morning or afternoon.

Yield: 25- 30 cookies

Time: 20 Minutes


1/4 cup coconut oil (melted)

1/2 cup unsweetened applesauce

1/2 teaspoon vanilla

1/4 cup honey

2 large eggs

1/2 cup rolled oats

1/2 cup sorghum flour

1/4 teaspoon ground ginger

1/2 teaspoon ground cinnamon

1/2 teaspoon baking powder

1/4 cup ground flax

1 carrot (finely shredded

1/2 cup shredded coconut(sweetened coconut recommended)

1/4 cup dried cranberries

1/4 cup pecans (chopped)

Preheat oven to 350.

In a food processor, add the sorghum flour, ground ginger, cinnamon, baking powder and ground flax.

Blend well.

Beat eggs and add vanilla, unsweetened applesauce, honey and coconut oil.

Then add the remaining ingredients and pulse a few times to mix them up.

Use a cookie scoop to drop cookies onto a lined baking sheet.

Bake for 15-18 minutes.

Let cool before removing from the baking sheet .
