Lemon 🍋 Cranberry Cake

Have yourself a holly jolly Christmas with this Lemon Cranberry Guilt-free, I mean Gluten-free Cake. ☺️ If your looking for a last minute dessert to whip up, well this is it! This cake is undoubtably festive and so easy to make. The best part of this cake is, it carries a sweet citrus aroma throughout the house that smells so cozy.

I don’t know about you but we’re in full swing of the holidays here at our house. The presents are wrapped, the elf is hopping around causing trouble (wink-wink) and the kids are so ever excited for Christmas. Mama is fine tuning the Christmas tree (always) while listening to Michael Bubble and continuing to keep the magic alive.

Lemon 🍋 Cranberry Cake

5 eggs

1/3 cup butter + 1 tbsp coconut butter

1 tbsp vanilla

1 tsp baking powder

1 tsp baking soda

1 helping 1/2 cup of coconut flour

1/4 coconut milk

Lemon zest from 1 while Lemon

Squeeze the juice from the whole lemon

1/3 cup maple syrup

1/2 cranberries (soaked for 5 mins)

Mix all wet ingredients together. Add in the dry ingredients . Add cranberries at the end. Transfer to a cake pan and bake at 350F for 25 minutes
